Bisù is a Sauvignon Blanc with distinctive character.
The pedogenetic variability of the soils where it is grown provides the perfect balance of aromatic richness and lasting flavor. Manual harvest during the second ten days of September. Soft pressing in an inert atmosphere, followed by static decantation of the must. Fermentation takes place at controlled temperature in stainless steel tanks. The wine is then aged on the lees for about 8 months in second- and third-passage French oak tonneaux, and subsequently bottle-aged for approximately 6 months before release.
It is a wine with a delicate bouquet of elderflower, lychee, mango, and exotic fruits in general.
Easy to drink, fresh, and almost thirst-quenching, it carries the honest and bold personality typical of the mountains.
