Passaturo is a single-varietal red wine made from 100% Malvasia Nera, a native grape of Puglia’s Salento region. Its name refers to the narrow country paths (“passaturi”) shown on a 1600-era map of the estate, depicted on the label - adding a historical touch.
Bright ruby-red with violet highlights, Passaturo offers intense aromas of cherry and wild strawberry, with hints of cocoa and tobacco leaf that become more pronounced in broader glasses. Soft on the palate, it ends with a slight sweetness and gentle tannins for a balanced finish.
Vinification involves mechanical harvesting, grape selection, and fermentation in stainless-steel tanks at controlled temperatures. It is aged for about four months in steel, followed by two months in bottle before release.
Pairings: excellent with cured meats, grilled red meats, and hard or semi‑hard cheeses. Serve chilled between 12–18 °C.
