Bisù offers a delicate yet expressive bouquet of elderflower, lychee, mango and exotic fruits. Fresh, lively and remarkably easy to drink, the palate has an almost thirst-quenching quality, while its persistent flavour and refined structure provide depth and character. It is a Sauvignon Blanc that combines aromatic generosity with the fresh, bold personality of a mountain wine.
The distinctive character of Bisù is strongly connected to the diversity of the soils in its Trentino vineyards, which contributes to the balance between aromatic richness and persistence. The grapes are harvested by hand in the second ten days of September and gently pressed under an inert atmosphere to protect their aromatic freshness. After static clarification, fermentation takes place at controlled temperature in stainless steel. The wine then matures for approximately eight months on the lees in second- and third-use French oak tonneaux, followed by around six months of bottle ageing before release. The restrained use of seasoned oak adds texture and complexity without masking the vibrant varietal character of Sauvignon Blanc.
