This Catarratto wine is carefully crafted, beginning with a gentle pressing of the grapes followed by fermentation at 15°C for 15 days. The wine then undergoes a nuanced aging process, first in small oak barrels for four months, followed by an additional three months in stainless steel tanks, and finally rests in bottle for at least a month to achieve balance and complexity.
In the glass, it displays a pale yellow color with golden highlights and reveals an inviting nose of dried figs, enriched by delicate notes of anise and vanilla. On the palate, it is full-bodied and mineral-driven, with refreshing acidity and a long, lingering finish, showing layered flavors of lemon jam, ripe apricot, and toasted hazelnut.
Its versatility makes it an excellent companion to roasted white meats, grilled shellfish, and pan-cooked vegetables with garlic, while also pairing beautifully with smoked meat carpaccio and mature cheeses.
