The wine remains for approximately four months in stainless steel, followed by two months of bottle ageing, preserving its vibrant fruit and varietal character. The name “Passaturo” refers to the narrow country paths – passaturi – shown on a 17th-century map of the estate reproduced on the label, connecting the wine with the history and landscape of Vetrère.
