Chateau d'Auvernier Neuchâtel Blanc AOC, Non filtré (Sélection Tradition)
A Neuchâtel specialty made from the Chasselas Fendant Roux grape, Neuchâtel Blanc Non Filtré is the first wine of the year, released on the third Wednesday of January.
Its cloudy appearance comes from the lees in suspension, which also give it unexpected citrus notes, especially grapefruit.
Served like Neuchâtel Blanc, it pairs well with an aperitif or, at the table, with lake fish. It also goes wonderfully with asparagus or a hard-boiled egg.
Some enjoy it very young, delightfully fresh and cloudy. We prefer it more mature, with a lightly veiled appearance. In this case, it comes from a summer bottling and can age for several years without losing its freshness, as the lees help preserve it.
Serving temperature: 10 - 12°C
