Grape variety: Verdejo, fermented in barrels.
The wine is made entirely of Verdejo grapes from the La Pardina estate, fermented in French oak barrels of 500 liters. Aged on lees for 7 months, over which there was a weekly “batonnage”, resulting in an elegant and robust wine, where the varietal provides freshness and the oak a stunning complexity.
The barrel fermented Verdejo is a limited production, depending on the year only 3,000-5,000 bottles are made.
The wine in the glass has brilliant and clear straw yellow colour with golden highlights. When sniffing into the glass with eyes closed one can smell the summer, perfume of the orange grove. Spicy tones, vanilla, lightly toasted, conjoined with the fruityness and the aniseed characteristic of Verdejo.
It has a great mouthfeel coupled with a touch of acidity that adds freshness to the heavy perfumes.
Pairing suggestion: fish, seafood, rice, pasta, cheese, sausage and light meats.
